- 1 pineapple to purée (You’ll need 1 ounce of it for each cocktail.)
- 1 ounce coconut cream
- 1 squeeze of lime
- ½ ounce brown simple syrup (equal parts brown sugar and water)
- 1 ounce light rum
- ½ ounce dark rum
- Coconut shavings
- Ice, as needed
Core the pineapple. The easiest way is to use one of those fancy pineapple corers. This would leave the pineapple shell intact to use if you wish.
Slice up the pineapple flesh, and blend.
Add all ingredients into shaker, and shake.
Pour into glass. Top off with sprinkle of coconut shavings.
Garnish with a pineapple leaf or two.
